We don’t do corporate. We don’t do formulaic. We don’t do “the customer is always right” through gritted teeth. What we do is serve proper food, pour proper drinks, and have a proper laugh doing it.

MRBL is a British steakhouse in Leadenhall Market. The brief’s simple: native breeds, dry-aged, cooked over charcoal. The execution’s where it gets interesting.

We want people who give a damn. Who know the difference between a ribeye and a rib of beef. Who can hold a room, pull a pint properly, and tell a regular they’ve had enough without starting a fight. People who think hospitality is a craft, not a stop-gap.

We’re big on attitude — the good kind. Warm, sharp, quick-witted. Slightly irreverent. A bit of life behind the eyes. If you’re the sort who’d rather recommend the anchovies than push the special, we’ll get on.

No clock-watchers. No yes-people. No robots. Just good hands, clear heads, and a sense of humour.
